Isohumulones in beer: automated bitterness analysis and pattern recognition

Thermo Scientific™ Total Solutions for Isohumulones in Beer provide a robust, user-friendly, and fast on-line, SPE-UHPLC method that improves the traditional off-line SPE-HPLC analysis of isohumulines in beer.

Isohumulones (iso-α-acids) form approximately eighty percent of the typical bitterness of beer. Their antimicrobial effect leads to a sterile beverage, their tensioactive character stabilizes the foam, and they have a major influence on the general flavor, smell, and smoothness of beer.
HPLC represents the only analytical method that enables the specific quantitation of iso-α-acids in beer.  Thermo Scientific Total Solutions for Isohumulones in Beer provide the determination and quantitation of all major cis- and trans-isomer variants of iso-α-acids that are present.

The solution consists of a Thermo Scientific™ Dionex™ UltiMate™ 3000 system package and its related Thermo Scientific Isohumulones Starter Kit. System packages contain Thermo Scientific™ Dionex™ Chromeleon™ 7.2 Chromatography Data System software, as well as the UltiMate 3000 hardware needed to set up an entire UHPLC+-focused system for measuring the isohumulones.
The starter kit provides all of the consumables, thereby the analysis can be started immediately.

There are several advantages to the on-line sample preparation approach as sample preparation is a crucial aspect in food and beverage analysis:

  • The on-line SPE method speeds up and automate labor-intensive sample cleanup and enrichment processes, making direct injection of untreated samples and unattended 24/7 operation a reality.
  • The beer sample can be injected without any sample preparation.
  • The workflow completed the analysis in 9 minutes as compared to 1 hour used by off-line SPE-HPLC analysis.
